Ultra high temperature pasteurization

 You can process your items at temperatures known as High Temperature Short Time (HTST) and Ultra High Temperature (UHT) pasteurization. High-acid aseptic processing, and hot-filling are all HTST procedures. A UHT procedure is low-acid aseptic processing. Finally, depending on the product, Extended Shelf Life (ESL) operations are carried out at either the HTST or UHT temperature range. The procedure and temperature range that best meets your demands will depend on the product, the shelf-life, and the storage requirements.

The temperature ranges at which processes are carried out are referred to as HTST and UHT.

The typical HTST temperature range is 176°–230°F (80–110°C).
